How to Eat Your Veggies (Even When You Don't Like Them)


If you've seen my transformation then you must know I did have to eat some veggies. I will tell you the truth though....I HATE veggies! I am not a big salad fan either. I can occasionally eat a salad, broccoli or cauliflower but that is about it.

What is even sadder?? 
Finding out the veggies I liked are actually starchy carbs. That was sad news to me. Those things were corn, edamame, potatoes of any kind, and peas. No wonder I liked those!

So how do I do it?? About to give you some of my little tricks and tips!!

1. Make a green smoothie.
I have a Vitamix so I can throw whole fruits and veggies in it and have a perfectly smooth smoothie. If you don't have an expensive blender you can still use a magic bullet or regular blender. You must simply cut up the fruit into smaller pieces. You also need to blend the greens with water or juice first & then add the fruit. I usually do 1-2 fruit with about 3 cups of greens. Kale, spinach, cucumbers and romaine are my favs!

2. Mix them up!!
I cook chicken or other meats in salsas that are homemade! Super healthy and delish and the meat always comes out tender!! I love cooking whole wheat pasta and cooking tomatoes and spinach into the mix! doesn't taste like you are eating any veggies and makes your pasta amazing!! Also, dicing up zucchini, tomatoes or other veggies into rice or quinoa is a great way to get in your veggies, packing your starch with flavor and adding spices to your liking.

3. Hide & disguise them.
There are many ways to do this! Cauliflower is great for making fake mashed potatoes or cauliflower rice. You can also make a cauliflower crust. Zucchini is great to spiralize to use as spaghetti or even get creative and slice to make zucchini lasagna noodles. My favorite way to eat veggies is in soup!! Any vegetable cooked in a soup becomes so soft that you don't know you are eating it. Want chicken noodle soup?? Make zucchini noodles for it and add your fav veggies!

10 Things You Might Not Know About Me

1. My nickname was Tifferz in grammar school.

2. I have a bachelor's degree with 3 majors: Communications, Human Resource Development, & Early Childhood Education.

3. I am majorly obsessed with Britney Spears.

4. I am sometimes scared of not being in control of my life.

5. I am definitely not always in the mood to workout (I know shocker, right??)

6. I thought my husband was so hot the 1st time I met him at a mutual friend's b-day dinner (we were not together yet) .When I told him he said he didn't remember me being there. (He could've lied about that one!)

7. I was and still am deathly afraid of being pregnant and having another c-section.

8. Don't speak in Spanish about me. I will understand you. Hehe.

9. I went to school to be a makeup artist & got my certification..found out I loved it as a hobby. : D

10. I may not be Mexican, but I can sure cook almost any Mexican food authentically from scratch. I am Mexican at heart. <3

Lean, Green Smoothie


Ingredients:

  • 1 cup green grapes
  • 1 cup pineapple
  • 3/4 cup water
  • 1 celery stick or 1/2 a cucumber (you choose)
  • 1 cup kale
  • 1 1/4 cup spinach
  • 1/2 cup ice
Directions:

Place all ingredients in Vitamix on the smoothie setting. If using a regular blender you will have to blend kale and spinach with the water first and then add the rest of the ingredients to blend.

This smoothie is amazing for your health & skin! Pineapple promotes efficient digestion which aids in gorgeous skin! Celery helps eliminate dark circles and puffiness around the eyes. Kale battles free-radicals & damage to your skin, as well as fighting cancerous cells. it eliminates toxins from the body which lead to a more toned appearance. Whoohooo!! Cucumbers help keep you hydrated flush bloating out of the body as well as helping to reveal a glowing skin complexion. Spinach is a powerful aid in preventing wrinkles & removing dead skin cell.

Insanity Max: 30 is Coming!


INSANITY MAX: 30 IS COMING!!

I don't know about you all, but I am super excited for this!! I could never, ever finish 60 days of Insanity, in fact I could never finish a whole hour of Insanity. Haha. I am definitely not a fan of cardio, especially when its 1 hour and kicking my butt!! I definitely paused it A LOT! 
Well...MAX: 30...I am EXCITED for!!! The intensity of Insanity, with killer results and ONLY 30 MIN!!! SIGN ME UP!! Here is a steak peek of what is to come!! This will be released in December. Look forward to more info to come!


Cauliflower Mashed Potatoes


INGREDIENTS:
1 head of cauliflower
3-4 garlic cloves
2 tablespoons 0% Plain Greek yogurt
1/2 teaspoon himalayan pink salt
1/4 teaspoon black pepper
1 1/4 tablespoon Flavor God Garlic Lover's seasoning
1 cup Organic vegetable or chicken broth
1 small gold potato (optional, but will make it taste even more like mashed potatoes)
1 tablespoon grass fed butter (optional)

Directions: 

1. Cut cauliflower into pieces and place in a food processor or Vitamix with all other ingredients. (Make sure the cauliflower and potato are microwaved or steamed ahead of time so your Cauliflower Potatoes come out creamy.)

2. Blend in food processor until cauliflower resembles the creamy texture of mashed potatoes. In Vitamix, start at 1 and blend on 7 for about 30-45 seconds.

Get creative!!  Mix some fresh herbs or cheese into the mixture!! 

Voila!!! Enjoy!!
